If you have the grill fired up, why not throw on some corn on the cob? This is a quick and easy way to have that roasted corn flavor.
Of course you can leave the shucks on, soak them in water and then grill. The shucks end up toasty, and the corn is sweet and crunchy.
To remove the shucks, the corn itself gets that grilled flavor. I love it! I topped our corn on the cob with this spicy vinaigrette to keep it moist and yummy.
Spicy Vinaigrette
1/2 cup extra virgin olive oil
1 1/2 Tbs lime juice
1/4 tsp red pepper flakes
2 Tbs fresh cilantro
Combine and whir in the bullet or blender. Pour over the corn and allow to sit for several minutes.
I bet you can't eat just one!

I bet I couldnt either! I LOVE corn. This weekend I went to Homestead Hollow. Wanna know what I bought? Cornbread, roasted corn on a stick and a 5 dollar bag of cornmeal. Hmm?
BTW- I highly recommend that cornmeal. Stone ground, no hulls and unlike cornmeal in teh grocery store, it contains the cornoils that makes cornbread the perfect crispy on the outside. The grocery store brands remove the oil for shelf life. Try it, youll never go back to store bought.

This is street food here in Athens. We saw a vendor set up selling grilled corn on the cob by the Acropolis today.
Another technique is to melt a little butter, spread it on shucked ears of corn, wrap 'em in foil, and put them on the grill. They do get that "grilled" look, sometimes even the "burned" look!

My boys and girls love corn grilled out...better than the meat dishes actually!

We were in the outback over the weekend, and threw some corn on the open fire! I love it with mayonnaise and lime--the way you get it in Mexico.
