As we made the long walk to Villa Cimbrone ~ we saw that they had set a beautiful table, complete with candles. It was for a photography class (and of course I brazenly helped myself to some photos)

Traveling for the Holidays

We will be traveling for the holidays . . . a little LuLu time. We will also be meeting family on the coast for some walks on the beach and maybe even some beachy photos.

~ Dolce ~

Turn your Gluten sensetive eyes away ~ This post is not for the faint of heart.

'Dolce' ~ in Italian that is sweet. . . but these are nothing like the sweets here. They are full of flavor, but not sweet like a Krispy Kream Donut.

We wandered by this coffee bar every day ~ to be tempted by a Baba or a Cannolo

Tempting.
But also the perfect stop before the climb back up the stairs.

Most everyone had a treat.
I took picutures!
But . . . don't feel sorry for me. There is another place around the corner with a gluten free chocolate tort that was to.die.for

Cooking Light ~ It's Thyme for Turkey

This month for our Cooking Light Virtual Supper Club, we have decided that it is 'Thyme for Turkey'. The holidays are quickly approaching and we are looking for ready to celebrate Turkey and Thyme.
I searched through the Cooking Light treasure trove and found  This  Recipe for a Salt and Pepper Roasted Turkey with Thyme.
Perfect.
It is a super simple way to prepare a turkey. The bird could even be rubbed down with Salt and Pepper the night before and kept in the fridge unitl ready to roast.

Salt & Pepper Roasted Turkey
One Turkey (14 to 23 lb.)
1/4 cup olive oil
1 tablespoon salt
1 tablespoon pepper
5 or 6 thyme sprigs (about 5 in.)
5 or 6 marjoram sprigs (about 6 in.)

Preparation

1. Remove and discard leg truss from turkey. Pull off and discard any lumps of fat. Remove giblets and neck; save for Rich Poultry Broth. Rinse turkey inside and out; pat dry and rub all over with about 1/4 cup olive oil. Mix 1 tablespoon salt and 1 tablespoon pepper; rub evenly over skin and inside the bird. If desired, wrap airtight and chill 12 to 24 hours.
2. Place turkey, breast up, on a V-shaped rack in a 12-by 17-inch roasting pan; tuck thyme and marjoram sprigs inside body cavity.
3. Roast turkey in a 325º oven until thermometer inserted through thickest part of breast to the bone registers 160º, 2 to 3 hours.
4. Transfer turkey to a platter. Let stand in a warm place and rest at least 30 minutes, then carve.

Traveling ~ Hotel California?

Who would go to Positano Italy to stay at the Hotel California?

I would !
This is one of our little secret hide-aways.
Actually, it isn't such a secret . . . The Hotel California has been a standard in Positano for many years.

Location is one of the most important factors in this beautiful hill town. This small hotel is a short climb from the beaches.

The views are amazing.

But even more important than that, are the wonderful people. The Cinque family who own and run the Hotel California are what make this place special.
We'll be back!

PhotoHunt ~ Barbie

The PhotoHunt for today is 'Barbie'
I don't have any little girls and their Barbies in the house . . .

So, I am going with 'Shrimp on the Barbie' as the Aussies might say.

These Shrimp are threaded onto skewers of rosemary. (I have oodles of it in the yard)

First the shrimp are marinated with a citrus and rosemary sauce.

Then I turned up the grill and let them cook for a few minutes on each side.
