Still got Lemons?

I still have some lemons, so I whipped up another quick and yummy dish. Here lemons give boring roasted cauliflower a fresh update.
Y'all know the squeeze the lemon upsidedown trick~ It will keep the seeds from falling into the bowl.
Roasted Cauliflower
1 head of cauliflower, separated
juice of 2 lemons
2 Tbs olive oil
Freshly ground salt and pepper
Pre heat oven to 425○
Separated cauliflower into bite sized florets. Combine lemon juice and olive oil. Soak cauliflower in marinade for several minutes.
Spread onto a nonstick baking sheet and roast for 10 minutes. Gently turn and roast another 6-10 minutes. Salt and pepper to taste.
This makes a great fresh and lemony flavor to otherwise boring roasted cauliflower. It was perfect with left-over crab cakes.

Yes... we do eat leftovers!

I go through a bag of lemons at least every week.....usually just squeeze in my water, or on fish!
Makes the cauliflower sound delicious!

i have no use for cauliflower unless it's roasted. the addition of lemon sounds pretty enticing!
