With the 4th of July coming up, I've decided to post a few grillin' recipes. It is a good way to keep from heating up the kitchen. July in Alabama~ Porca Miseria!
This is a recipe for a yummy sauce for chicken. Perfect for the 4th!
Bourbon-Molasses Chicken
1/2 stick butter
1 cup minced onion
1 cup ketchup
1/4 cup molasses
2 Tbs brown sugar
1 Tbs Worcestershire sauce
1 Tbs mustard
1/2 tsp chili powder
1/4 cup bourbon
Salt and Pepper
Melt the butter in a saucepan, add onion and saute until soft. Add ketchup, molasses, sugar, worcestershire, mustard and chili powder. Stir to combine and simmer until the sauce thickens. Stir in bourbon, simmer for another 3-5 minutes. (this may be made ahead of time and refrigerated.
To use this sauce on chicken; Generously salt and pepper chicken. Start chicken off on a hot grill. Using half of the sauce, brush on to chicken breasts while grilling. Reserve the other half to use as a dipping sauce or on burgers.
