Cooking Light Virtual Supper Club ~ Stuffed Chicken

I might be in Italy... but that doesn't mean I need to miss this month's Cooking Light Supper Club! That is the good thing about a Virtual Supper Club. We can meet up from all over the world for some great CookingLight.com recipes.

This was my month to select the theme for our meal. I picked herbs! You can see from these pictures of the garden behind the villa why I was thinking about using some fresh herbs. The smell in the morning is amazing, as I sit an drink my cappuccino.
The recipe I picked from Cooking Light is Chicken Stuffed with Herbs. Using freshly picked rosemary from our garden was wonderful!

This was fun and easy to make and delicious to eat. The fresh rosemary is once of my favorites, especially when mixed with creamy goat cheese. I used chicken breasts as the recipe called for, but it would even be easier to use chicken cutlets.

Now let's see what everyone else has brought for our fresh herbal dinner!

What a yummy recipe - I'm going to try it later this week as we have lots of rosemary right now! Of course, it's not as nice as having lots of rosemary in Italy . . .

I have been wanting to make stuffed chicken breasts for awhile now. These look wonderful. And your pictures of Italy are wonderful. Thanks for sharing.
