Cooking Light~ 5 Ingredients

I have had fun joining the girls who get together once a month for the Cooking Light Virtual Supper Club This month we are all bringing something that is quick and easy... 5 ingredient dishes from Cooking Light .

Springtime is here! So I am bringing a plate of fresh asparagus, lightly tossed with browned balsamic butter and a zest of lime. Roasted Asparagus with Balsamic Browned Butter
40 asparagus spears, trimmed (about 2 pounds)
Cooking spray
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
2 tablespoons butter
2 teaspoons low-sodium soy sauce
1 teaspoon balsamic vinegar
Cracked black pepper (optional)
Grated lemon rind (optional)
Preparation
Preheat oven to 400°.

Arrange asparagus in a single layer on a baking sheet; coat with cooking spray. Sprinkle with salt and pepper. Bake at 400° for 12 minutes or until tender.

Melt butter in a small skillet over medium heat; cook 3 minutes or until lightly browned, shaking pan occasionally. Remove from heat; stir in soy sauce and balsamic vinegar. Drizzle over asparagus, tossing well to coat. Garnish with cracked pepper and rind, if desired.

Ummm, love me some asparagus! I followed someones recipe for asparagus pesto and it was fantastic, so I might infuse this into a pesto, it seems like it would be great!

Oh my goodness..that looks amazing..I think I could eat that all. I never use to like asparagus..it grew wild around our home but now I love it. Always reminds me of Spring...have a great week xo

Sandi, We love asparagus and after Roy's Gastric Sleeve operation, we have vowed to eat light and healthy foods.

As soon as he is on regular food, we will try this.
