A Taste of Sunshine

Are y'all ready for something very un-holidayish?
This is a recipe that was in Southern Living last summer. We changed it up a bit, and it was yummy! Perfect for a taste of sunshine.


Beach Shrimp
3# large shrimp
1/2 bottle Italian Dressing
1/4 cup white wine
1 1/2 Tbs ground pepper
2 cloves garlic
2 lemons
1/4 cup fresh parsley
1/2 cup butter
Dice garlic and chop parsley. Place first 5 ingredients in a 9x13 baking dish, tossing to coat. Squeeze juice from lemons over the shrimp and stir. Add lemon halves to pan, sprinkle with parsley, dot with butter. Bake at 375° for 25 minutes. Stirring once.
Serve with crusty french bread to sop up juices.


It's almost like being at the beach.

How I'd love to live where the shrimp are fresh! Recipes like this remind me of wonderful meals in New Orleans, or on the beach in Florida. And then I look out my window, at snow on the ground... and then back at your lovely photo of the beach. Thanks for a bit of warm weather cheer!

I had to come by when you mention shrimp because I love shrimp and this looks so good and sounds pretty easy. When we go to Hilton Head, I love to watch the shrimp boats go out for the day and getting their shrimp from the roadside stands---too yummy!

Believe it or not, I had never read Southern Living, until recently. I liked the recipes. Very simple and traditional.

I love shrimp...boiled, fried in gumbo or creole...and this looks like something I would like, too...or for some fresh off the boat shrimp in Charleston or Mobile!!!

I showed this to my hubby and guess what he's fixing for dinner tonight? *lol* He's originally from the Jersey shore and he needs a little bit of something to remind him of the beach from time to time. The desert living is getting to him! : ) Thanks for sharing!
