Photohunt ~Broken

The Photohunt for this week is 'Broken' A batch of red velvet cupcakes with creme cheese icing for Valentines Day~ and our diet is 'Broken'.
This is a recipe adapted from a Paula Deen recipe by decreasing the oil and substituting with low fat yogurt. (sorry Paula)
Red Velvet Cupcakes
2 large eggs, room temperature
1 cup fat free vanilla yogurt, room temperature
1 cup vegetable oil
1 teaspoon cocoa powder
1 teaspoon salt
1 teaspoon baking soda
1 1/2 cup sugar
2 1/2 cup all-purpose flour
2 tablespoon red food coloring
1 teaspoon white distilled vinegar
1 teaspoon vanilla extract
Preheat oven to 350°

In a large mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In a large bowl gently beat together the oil, yogurt, eggs, food coloring, vinegar, and vanilla with a handheld electric mixer. Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined. Fill individual cupcake liners and bake for 22-25 minutes until toothpick done.
I used a 'low cal' creme cheese frosting... Maybe not totally 'broken'.

I think since you reduced the fat you are not broken! LOL! I weighed at 5+ weeks on my low/no carb diet... had only lost three pounds!! So, now I'm just on a frenzy of frustration! I still haven't broken down to have sweets... but, those cupcakes my take me over the edge! After all, they are reduced fat! ;)

My daughter learned from a health cookbook that you can replace cooking oil with applesauce....so she does this every time in her baking!! Talk about moist!
Diet....what is that?

I love red velvet cupcakes! Thanks for visiting my site Stirring the Pot. What dedication you had to drive from AL to Atlanta for Trader Joe's. I'm sorry to hear they were out of Prosecco, but chocolate sounds like a great way to console yourself. Wouldn't it be great if Trader Joe's opened up some more stores down our way?
