Sourdough Pancakes

Kudzu the sourdough starter has been growing in the fridge. After about 2 weeks I decided it was time to give it a try. My first attempt was the easiest of all... sourdough pancakes.


They turned out perfect. Just the right amount of sweet and sour, light and fluffy.


Sourdough Pancakes
2 cups starter
3 eggs
1/2 cup milk
1/4 cup sugar
1 1/2 cup flour
1 tsp soda
2 tsp baking powder
1 tsp salt
2 Tbs olive oil

Feed the starter the night before with kudzu food. Allow it to sit on the counter over night. The next day, take out 2 cups of starter and make the pancake batter. Feed the kudzu again before returning it to the fridge so it will be ready to go again.

I love pancakes and haven't had any in forever. Now I am going to be thinking about pancakes.........LOL Been catching up with your posts. The centerpieces were lovely and I'll have to check out the cookbook. Hope you have a great weekend!

Kudzu, that's a great name for sourdough starter! My mom used to call hers Herman, ah...memories of breakfast with Herman, I think she even took him on vacation with us when we would go on our annual vacation to the beach cabin.

I get to try my sourdough pancakes on Wednesday...that's when it will be ready. It's bubbling right along for now.

I had previously tried a sourdough pancake. These look a lot better. Mine had come out to thin.

These were the beast sourdough pancakes I've come across yet. My last batch was too flat, and bland, these were pancake heaven. I had two friends join me for the first batch ever and they raved about them. I did make a couple of changes:

-Halved the recipe but used two eggs
-Separated the whites from the yolks
-Fluffed the whites and beat them in right at the end
-Used canola instead of olive oil.. don't know why but it just seems weird using olive oil in pancakes

I'm gonna make em again tomorrow, I'll post a picture then.
