Make up your mind!
I have a new pair of spring shoes that I am dying to wear~ in the mean time I will bundle up and make a pot of soup. I have some leftover broccoli that will be perfect.
2 cups broccoli
1 onion diced
3 Tbs butter
1/4 cup fresh parsley
1/4 cup flour
2 cup chicken broth
2 cups half& half
juice from 1/2 lemon
salt & pepper
1/2 tsp lemon pepper seasoning
pinch nutmeg
Cook broccoli (fresh or frozen) until tender. In a skillet, saute onion in butter, add flour and stir together. Brown the flour lightly. Place all the veggies into a blender and pulse until they are coarsely chopped. Add 1 cup of broth into the blender. Combine until thick and smooth.
Return broccoli puree to sauce pan and add remaining broth, cream, lemon juice and spices. Cook soup over low heat until heated through.
Serve with a topping of grated sharp cheddar cheese for a yummy soup.
That'll warm your tummy don't you know!
Y'all enjoy~

I know just what you mean. We had snow flurries Monday evening and then high 60's today. I can't keep up, I tell 'ya. My closet looks like a tornado ripped thru it. Just when I put a sweater on, I find out it's going to be warm. Just when I'm sure it's going to stay warm, the temperatures drop and I have to throw my sandals back and dig for my boots instead. This crazy weather is making me need to hire a maid to clean my closet. Yeah, okay. So the state of my dirty house in general is making me need to hire a maid. Too bad my checkbook doesn't feel that need, too. lol

Hey friend! I've missed you! Why don't you drop on by and bring some of that soup?! I'll make some yummy cheese toast and we'll chat a while!!!
Hope all is well!

Sprinkle some cheese on the soup and yours forever! I love cream of broccoli soup. Thanks for the recipe.
I hear you about the weather--March is such a beast. And can you believe that I have, ahem, never, ever made homemade cream of broccoli soup? Shameful! Thanks for the recipe!
I always seem to make cream of cauliflower soup, and you have inspired me to try broccoli soup next time.
Green soup will be perfect for St Patrick's Day! :-)
Thanks,
Pat
Yummy! Did you make enough to share?
Hugs!

Hi Kari & Tracey~ Glad to see you back in blogland & at the cafe!
Green Soup for St Patty's day... my favorite holiday!
Yumm...sounds good. It was cold and rainy here all day so I made a pot of soup (chili blanco) and cornbread. Sure hit the spot. I think you should post a photo of your new spring shoes. :) Lynn
