Chicken Salad

There is nothing fancy about this chicken salad. My secret is to mince everything up tincy tiny and use fresh herbs. The nice thing about chicken salad is that you can add what every you like~ apples, grapes, pecans, or almonds.

Chicken Salad
4 boneless chicken breasts
1/2 cup celery, diced
1/2 cup onion, minced
1/4 cup flat parsley, basil
1/4 cup pickle relish
1/4 cup mayonnaise
Cook the chicken breasts, shred the chicken and dice into tiny chunks. Mince the onions, celery, parsley, and basil into tiny pieces. Blend together with relish and enough mayonnaise to bond the mixture together. Add salt and pepper to taste.
I had my plain chicken salad with a slice of avocado and a squeeze of lemon. I can almost taste that last bit of summer sunshine!

I like to add a dash of curry powder to mine as well--spices everything up a bit!

My all time favorite. This is what I order off a menu if I'm not sure what's good. Ditto on the curry powder and I add a little lemon juice to brighten the taste. Think I'll have this for lunch.

Your recipe sounds yummy. I love chicken salad since there is sooo many ways you can make it and they're all good. My favorite - chicken, mayo, celery, toasted pecans or walnuts and crasins. I'm actually have some today for lunch. Yum!

This is really, really weird. I was just telling a lady I work with that I had never had chicken salad until about 3 months ago. A little cafe where I live makes it and adds it to an incredible lettuce type salad. Anyway I told her today that I have got to find a good recipe. Did you read my mind?

Yum, looks great Sandi. YAY for stuffed avocados. Sometimes for breakfast I stuff an avocado with cottage cheese and top with fresh salsa. I like your idea of dicing up everything really small, more elegant that way...
