Summer = Salads

Summertime in Alabama... Sheesh!!
How about a fresh salad? I eat salad everyday. Not very exciting, I know. I eat salads because they are light.... I can't imagine if I had a burger and fries everyday at lunch. I really do love a good crunchy salad. This salad with fresh strawberries and purple curly basil was pretty enough to get onto the blog. (most don't)I used my special extra virgin olive oil and aged balsamic vinegar from Pienza. With a big glass of lemonade, it was enough to cool me off.


What is your favorite thing to put on a salad?

Yummy! Lately I have been using the dried cranberries and walnuts. And maybe a little crumbled goat cheese!

I love Craisins on a salad..also..almonds and cheddar french fried onions!

Hey, Sandi, I just love salads too & love all the fruit added, like Tonja mentioned cranberries, any kind of nuts, and goat cheese, yummy! Love it all! Salads are great for this time of year.

Hey Sandi. I'm with you on the light, crispy salads in this heat. I love strawberries and blueberries on my salads, as well as feta cheese and lots of sliced carrots.

My favorite salad:

mixed greens
feta cheese
sunflower seeds
walnuts
crasins, mandarin oranges & strawberries

I love to top it with Ken 's Greek dressing. Oh. My. Word! So yummy!

Hi Sandi,
I love pistachios and sliced figs on a bibb salad with balsamic vinegar. Throw a little crumbled Stilton on there if it's for dinner.

I like steamed lentils from Trader Joe's (cold), Romaine lettuce, shredded carrots, goat cheese, spicy/sweet pecans (TJ's), and olive oil.

I could eat this all day.

So, I love craisins on a salad. And my new things is now making my own vinegarettes - it's so much better than the bottled stuff - although, I'm not knocking the bottled stuff - I've been eating it for years. Ina Garten's recipe for balsamic vinegarette is simple, yet very tasty...when I eat salads at home, I'm making my own dressings.

Oh and for a little southern touch at home w/your salads - try cornbread croutons!

Sandi - I'm laughing at your comment that most photos aren't pretty enough to make it on the blog. I have lots of those in the "not-blogworthy file."

I like nuts or seeds on my salads: walnuts, marcona almonds, pecans, pine nuts, pumpkin seeds, sunflower seeds, on and on...

Believe it or not, tomatoes are my favorite salad ingredient. Any kind will do.
I need more salad recipies as the 100+ degree weather will not let up here until about the end of October. Sheesh! :-)

Hi Sandi! Last night I put fresh strawberries from our gardne, and raspberries in our spinach salad. Along w/cheese, pecans and sesame seeds. DELISH!
