Bake it~





One of favorite ways to eat squash is just cooked with sweet onions in a little butter. We call it squishy squash. Bill will tell you that I could eat this every day. He is not as excited about my good deal on a bushel of squash as I am.



We also love a good squash casserole. This is an easy recipe that can be made ahead and frozen.

Squash Casserole
3 cups squash
1 sweet onion
1 cup cheddar cheese
1 cup crushed saltines
1/2 cup ranch dressing
3 eggs
Salt and pepper to taste

Saute squash and onions until tender. Allow to cool. Combine all ingredients in a large bowl. Beat in eggs last. Pour into a 9x13 baking dish. Cover with foil and bake at 350 for 30 minutes.

You can bet I have a couple of casseroles in my freezer right now.

I' ve never tried the casserole with ranch in it,maybe next time.My in-laws go down to the Vidalia onion festival a nd bring back tons of the onions,they went in May and I still have a huge bag full!.I can honestly say that I am 90% vidalia onion!!!

Hi there! My Mom and Aunt left this morning so I'm having fun catching up with everyone...finally! I'm hungry now that I've seen all your posts I've missed. I love squash. I love to just boil it with some onions until fork tender and then I drain them and add some pepper and butter. I can even eat it for breakfast if I sprinkle some shredded cheese on it while it's hot. Oh yum!

You are not going to believe this I just blanched some squash for my freezer. I too like to eat it the same way you do. I too could eat it everyday in the summer. My husband does not loke it at all. I am copying your recipe and will make it for dinner next week....Mary

I love summer squash just fried in a little butter, salt and pepper.

I have never had a casserole from this squash. Yours looks and sounds wonderful. I am going to copy the recipe so when my Dad gives me some squash, I can try it out.
