Have you seen the recent reports about the benefits of salmon? This fish is known to be rich in Omega 3 fatty acids, which has been proven to be helpful in reducing heart disease and cholesterol. I am just glad to know that something I like is actually on the good food list!
Salmon is our favorite fish. It can be one of the easiest things to prepare for a quick dinner, but also can be fancy enough for company. We enjoy it all the time.
You will find that I have a lot of salmon recipes... I am always trying something new. This is a great citrus-y dish that is light enough for a warm summer evening.
Orange Glazed Salmon
4 salmon steaks
1/2 cup marinade
1/2 cup orange juice
2 Tbs EVOO
1 tsp red pepper flakes
salt & pepper to taste
1 onion, sliced
1 orange, sliced
Place salmon in a combination of marinade and orange juice for 20 minutes. Heat olive oil in a skillet. Sprinkle fillets with red pepper flakes, place in the hot pan and sear both sides. Remove from heat. Pour the marinade into the skillet, bring to a boil and cook to reduce to a thickened liquid. Add onions and orange slices and cook in the simmering liquid until onions are tender. Return the fillets to the liquid and cook another 5-10 minutes until the fish is flaky. Serve with rice, using the orange marinade as a sweet glaze.

I'm sure I will enjoy this dish! I like salmon raw (like on sushi), but when cooked, would want citrus, like this orange sauce, to go with it :D

Oh I love fish more than anything and have noticed children will eat salmon! That is surprising. I just came from the Neisz Vintage Home and they are showing this recipe of yours today...the pics look tasty!
