Gingerbread at holiday time

I've decided to give the gingerbread men a break this year. In the past, I have posted my recipe for gingerbread men. I still wanted a bite of gingerbread...without having to chase little gingerbread men around the kitchen.

The flavor of gingerbread... in a muffin!
Cranberry Gingerbread Muffins
2 1/4 cups flour
1/2 cup brown sugar
1 Tbs ground ginger
1 tsp cinnamon
pinch of salt
1/2 tsp baking soda
1 egg
3/4 water
1/2 cup plain yogurt
1/3 cup molasses
1/4 cup canola oil
1 cup fresh cranberries
Pre-heat oven to 350°


Combine dry ingredients and set aside. Mix egg, water, yogurt, molasses and oil. Stir in dry ingredients. Fold in diced cranberries. Bake in muffin tins for 18-20 minutes.

These muffins are perfect for breakfast with a cup of coffee, use a splash of egg nog in place of cream. Just right for a holiday treat. I adapted this recipe from Healthy Cooking Magazine.
For a more decadent treat, try the Chocolate Ginger Chunk Cookies. My favorite!!

Thank you for posting this recipe. I was wanting to add muffins to my Christmas morning brunch. I LOVE gingerbread so I will be serving your wonderful muffins. And, to cream your coffee with eggnog!!! What a fabulous idea, dahlin'.

ha..I stopped by your blog tonight at about midnight and saw this recipe and said.."ooh I have just about all of the ingredients for this"..except I was out of eggs/I substituted some apple sauce for that...and I had a mess of dried cranberries instead of fresh...I just let them sit in the liquid a little bit..and I had vanilla yogurt instead of plain..no biggy this gal knows how to 'improvisse" in a pinch....but anyhow..once my hubby saw the recipe he was like.."hop to it!" I've been craving gingerbread!"
ha.
So..I nearly quadrupled your recipe..and have a 1/4 sheet cake in the oven ,as well as about 20 muffins.
I'll freeze some of the muffins and the sheet cake for later/when my mom comes to visit.
Thanks so much for the recipe..my hubby thanks you too..you helped his gingerbread craving..the muffins are in the oven as I type and they look splendid..and the sheet cake is next up..can't believe I'm doing this at midnight..but I do love that man of mine.thanks Sandi!

Sounds heavenly! I want to try both recipes. It will be such a treat for my family and friends. I was wondering if I don't have ginger to dice, can I substitute the powdered ginger? I know it probably won't have the heavenly flavor, but sometimes I can't find gresh ginger.
