Cooking LIght ~ Gingery Banana Pudding

The Cooking Light Virtual Supper Club is re-creating memories this month . . . The theme for our supper club is 'Everything Old is New Again' The idea was to recreate some of our favorite recipes from Mom's kitchen.
I thought of the Banana Pudding that was served at the WhistleStop Cafe . . . Yummy ~ but full of calories. Instead I found this recipe for  Gingery Banana Pudding on Cooking Light. It is a 'little' lighter with fresher ingredients.
The flavor is kicked up a notch with fresh ginger, gingersnap cookies (I used Gluten-Free) and a bourbon cream on top.
That is making the old New again ~
Gingery Banana Pudding with a Bourbon Cream
1/2 cup sugar
5 tablespoons cornstarch
1/8 teaspoon salt
4cups 1% low-fat milk, divided
2 large egg yolks
2 teaspoons vanilla extract
4 ripe bananas, divided
12 gingersnaps, crumbled and divided
1/2 cup heavy whipping cream
1 teaspoon sugar
1 tablespoon bourbon (optional)
1/4 cup chopped pecans, toasted
2 tablespoons minced crystallized ginger

Combine first 3 ingredients in a saucepan. Gradually whisk in 3 cups milk. Heat to 180° or until tiny bubbles form around edge (do not boil).
 Combine remaining 1 cup milk and yolks; stir with a whisk. Gradually add 1 cup hot milk mixture to yolk mixture, whisking constantly. Add egg yolk mixture to pan. Bring to a boil; cook 2 minutes or until thick, stirring constantly
.
Place pan in a large ice-filled bowl for 20 minutes or until mixture cools, stirring occasionally. Cover surface of pudding with plastic wrap. Refrigerate 2 hours or until chilled.
Mash 2 bananas; cut remaining 2 bananas into 1/4-inch-thick slices. Stir mashed and sliced bananas and half of gingersnaps into pudding; chill 30 minutes.

Combine cream and 1 teaspoon sugar in a medium bowl. Beat with a mixer at high speed until stiff peaks form; stir in bourbon, if desired.
Spoon 2/3 cup pudding into each of 8 dessert glasses; divide remaining gingersnaps among servings. Top each serving with 2 tablespoons whipped cream, 1 1/2 teaspoons pecans, and 3/4 teaspoon ginger.

It is definitely not the Whistlestop Banana Pudding ~ It is yummy and there isn't a vanilla wafer in sight.

Blue Monday ~ A happy day

Yesterday was a special day . . .

We celebrated Mom's 80th birthday ~ and luckily the BLUE water pitcher makes this a great blue Monday post.

Mary Jo, Or Gee Jo as we all call her, is an amazing southern lady. She is loved by so many, as she has touched so many lifes with her kindness and compassion.
She ran that WhistleStop Cafe for nearly 30 years. . . with dad's help of course. Cooking and serving in the kitchen day after day. She was busy in the kitchen the day Fannie Flagg came in and said "I'm going to write a book about my Aunt Bess and this cafe". . . as they say ~ the rest is history.
She is the backbone of this family!

PhotoHunt ~ LOUD ~

The PhotoHunt for this week is 'LOUD'
For years, a part of the thrill of going to the WhistleStop Cafe, has been the trains.

The Norfolk Southern line runs right in front of the cafe. The kids love to grab a seat by the window so they can watch the trains rumble by while they eat their fried chicken and plates of veggies.~ And the adults who line up outside the door . . . plug their ears.

Traveling Tuesdays ~ Let's Go!

There has been a lot of traveling this week . . . and for once I am the one staying put.
(Let me make a note of that next time Bill says I am always on the go)No one was traveling by train . . . Those days are long gone in the South.

A little history

Usually my sunday's are full of recipes. We are taking a day off from our Sunday Slow Suppers~ since all the other cooks are in San Diego for the great get together. We will resume with our sunday suppers next week.

My friend Virginia and I met at the WhistleStop Cafe in Irondale a week or so ago for lunch. It got me to thinking, and I remembered to ask Bill about how his family came to own the cafe. His dad was a railroad man, his mom was raising 3 kids... neither knew much about running a resturant.
So the story goes~~ Mr. Mac ate at this little cafe by the tracks in Irondale frequently. He loved the meat and veggies and sandwiches that Bess served. Miss Bess Fortenberry ran the small cafe with her friend Sue and a black cook named Lizzie. It was a thriving business, although small, with only enough seating inside for 31. Mr. Mac had talked to Bess about buying her cafe... before she would agree, she insisted that he have his wife come and talk to her. (smart woman!)

Mary Jo was busy on the other side of town raising kids and really didn't know much about Irondale or the cafe. She remembers walking into the tiny dim cafe to meet with Bess and was a little surprised. The cafe was in a small green framed building, with four booths and a counter for seating. There was a big Coca-Cola sign over the door and a couple of small dingy windows. Bess asked her "what in the world do you want to buy this cafe for?" Mary Jo assured her it was Mr. Mac's idea and she would only be working with him.

She remembers thinking she knew nothing about running a business but Dad was insistent. She drove back to Huffman, and prayed that Bess would decide to sell it to someone else. Instead... They became the owners of a cafe in Irondale. (or as Bill would say... the cafe owned them) Soon after they took over, the manager became sick and had to shorten her hours. The 'batter was made' and Mary Jo became a full time cafe owner/manager. Someone else's dream, became her reality.

By the 1980's the cafe was a booming success, the old building had to be torn down to meet health department standards, and a new cafe was built. This new building seated 100 and had an automatic dishwasher, 5 deep fryers, and a modern kitchen. It wasn't long before they were busting at the seams again.

Then... one day in 1983, a local TV personality and author, named Fannie Flagg walked in and said she wanted to write a book based on her Great-Aunt Bess and her old cafe. Many of the stories from the novel 'Fried Green Tomatoes at the WhistleStop Cafe' are based on real life stories from the early days at the cafe.
Our family sold the cafe in 2000, but Sunday's at Mom's still involve lots of yummy food and occasionally some Fried Green Tomatoes.

A day at the Cafe

Virginia and I met at the WhistleStop Cafe for lunch. It was the first time I've been to the Cafe in years... and now I am thinking~what a shame! The McMichaels' go a long way back with the cafe. Here is the history of the WhistleStop Cafe for anyone who is interested. I have also posted on the working kitchen, about the years Mom and Dad spent serving meals to generations of families in Birmingham.
It was 27 years ago when Fannie Flagg walked in and told mom she was going to write a book about her Aunt Bess, who had owned the cafe before Dad decided to buy it. Many of the stories in Fried Green Tomatoes at the WhistleStop Cafe are based on tales from those early years. The building hasn't changed in many years, even though we sold the cafe in 2000. The food is a s good as ever!

Not exactly on the diet... but what the Heck?? Everyone has to fudge sometimes.

Pans of Dressing!

Every year before Thanksgiving we divvy up the chores... for 3 working Mom's this is the only way we can get it all done. Thanksgiving at the McMichael house is like a Sunday at the WhistleStop Cafe... Pans of dressing, Green bean Casserole, Sweet Potato Souffle, Mac & Cheese, of course Turkey and Ham. For dessert (of course there is always room for dessert) there will be Pumpkin Pie and Pecan Pie.

I am making my pans of dressing ahead. I save up cornbread and left over buttermilk biscuits through the year. I throw them all into my 'bread for dressing' zip-loc bag. It stays in the freezer until I am ready to make some dressing.
Southern Cornbread Dressing
1 large pan cornbread
3 cups soft breadcrumbs
½ cup butter
2 onions diced
3 cups celery, diced
½ cup chopped fresh sage (1Tbs dried)
4 eggs
60 oz chicken broth, undiluted
1 Tbs fresh pepper
Crumble cornbread, and mix with breadcrumbs in a large bowl. Saute onions and celery in butter until tender, add sage, and stir one minute more. In the breadcrumb bowl, combine chicken broth, eggs, pepper, and cooled vegetables. (This will be soupy!) Pour into a buttered 13x9 in baking dish. Place in the fridge overnight (may sit for less if needed) Bake @ 375°, uncovered for 30-45 minutes.

I have posted this recipe before... but since the girls were looking for it this year, I thought I'd dust it off and post it again.
I am making it ahead and freezing it, so on the big day it can just be thawed and popped in the oven. I freeze it raw, before baking at all, wrapped in foil.
Bill has specific instructions how to thaw and bake everything... Because I am off to visit the Queen!

A bloggerversary giveaway!

What was I ever thinking? In Oct of 2006, Bill came up with the idea of starting a WhistleStop Blog. At first, the idea was that we would both be posting.

On Oct 7, 2006 I posted my first blog page. Now 3 years and almost 700 posts later... I am still at it. Bill has yet to make his first blog post (don't hold your breath on that one)

I will say over the past 3 years, I have developed some of the most amazing friendships. Many people I have met... others I've never seen face to face, but I feel like we are back door neighbors. We could sit over a glass of sweet tea and have plenty to talk about. I know that there are lots of blurkers who don't leave comments, but come into my bloggy kitchen every day. I have posted tons of recipes, tips, and crafty ideas. I've taken y'all on trips across the world and around town. You have shared in the important events in our lives.

I appreciate each of you! To celebrate our 3rd Bloggerversary I am going to have a giveaway. Leave me a comment (yes even you blurkers) and remind me of one of your favorite post, picture, or recipe. Dress 'em up

Most of y'all know the story... Our family owned the WhistleStop Cafe for almost 30 years. On the WhistleStop web site is a whole history of the cafe and all about the movie 'Fried Green Tomatoes at the WhistleStop Cafe'. It is fun reading for a rainy day.

I have posted our fried green tomato recipe several times. Link here for our recipe and this is Fannie's recipe. Either way... we are coming to the end of tomato season, so this is fried green tomato season. (You can also just order the batter mix!)

Here is a way to dress them up a little... like wearing your white gloves to sunday school.
These fried green tomatoes are just sprinkled with a little feta cheese. It is the perfect compliment to the tang of the green tomatoes. Perfection.
It can't get much easier than that!

Novel Food

Lisa at Champaign Taste and Simone at Briciole are once again hosting their Novel Event. This is a culinary/literary event that has inspired us over the past couple of years. Last December I posted the Kentucky Bourbon Pecan Pie Dottie Niven shared in 'A Redbird Christmas'. In September of 2007, I posted another of Fannie Flagg's great novels... 'Fried Green Tomatoes at the WhistleStop Cafe'. I just had to post Fannie's recipe for Fried Green Tomatoes.

This year my novel is another of Fannie Flagg's great southern stories. In 'Can't wait to get to Heaven' she manages once again to weave a story like a southern patchwork quilt. This recipe comes from Neighbor Dorothy, who hosts the local radio show~

"And now, from that little white house just around the corner from where ever you are, here she is, the lady with the smile in her voice, your neighbor and mine...Neighbor Dorothy."
Neighbor Dorothy's Heavenly Caramel Cake
1 3/4 cups cake flour sifted
resift with 1 cup brown sugar
1/2 cup butter
2 eggs
1/2 cup milk
1/2 tsp salt
1 3/4 tsp double-acting baking powder
1tsp vanilla
Pre heat oven to 350°
Beat for 3 minutes. Bake in a greased pan for 1/2 hour.
Caramel Frosting
2 Tbs cake flour
1/2 cup milk
1/2 cup brown sugar
1/2 cup sifted powdered sugar
1 tsp vanilla
1/4 cup butter
1/4 cup shortening
1/4 tsp salt
Mix flour and milk. Cook to a thick paste over slow flame. Cool. Cream sugars and vanilla with butter and shortening. Beat until light and fluffy. Blend in slt. Mix in cooled paste. Beat until fluffy. Blend. Should look like whipped cream.
Once again Fannie Flagg has let her Southern roots show through~ and these are not the roots that could be fixed at 'Tot's Tell It Like It Is' Beauty Shop!

Fry those Tomatoes

I think it is time to weigh in on the latest pandemonium that is sweeping the country... not the gas crisis (although Bill has a solution for that as well)
I am talking about the recent salmonella scare in tomatoes.
We have a solution...

Fry those tomatoes before they turn red!

I don't think Salmonella will survive in a bath of 400° grease. Here is our best recipe.
Fried Green Tomatoes
3-4 green tomatoes
1 1/2 cups flour
1/2 cup corn meal
1/2 tsp salt & pepper
milk
vegetable oil

Mix together flour, cornmeal, salt & pepper. Add enough milk to create a thick batter. Heat 2 inches of oil in a large skillet. Batter each tomato slice, and wipe off excess. Carefully place in hot oil, browning on both sides. (may or may not need turning, depending on the amount of oil)
To cool, drain in a colander to keep tomatoes from becoming soggy. Salt to taste.

If you want your batter to be perfect every time, pick up some WhistleStop fried green tomato batter mix. If you can't find it at your local market, you can pick it up on our web site.
