Easter Egg Salad

Who doesn't know how to make egg salad? This is hard to mess up...but I guess it has been done. Egg salad is something I don't even think about until Easter comes around. Then I get a craving 'flung' on me. It is the perfect solution to those leftover colored eggs.
When using colored eggs, the whites can be 'tinted'. This doesn't affect the eggs at all and adds a bit of excitement to a boring egg salad.
To make eggs salad I use...
6 hard boiled eggs
3 Tbs mayo
1 Tbs spicy mustard
1 Tbs pickle relish
2 green onions, sliced
Smish and smash to the desired consistency. Salt and Pepper to taste.

When I was pregnant... many, many moons ago~ egg salad on an avocado accounted for at least 30 of those pounds I gained.
It is still just as yummy!

Egg Salad is my husband's favorite. I don't use mustard, but will try it, it sounds very good. Thanks for the tip.

egg salad is on my list to make for a hike we'll take this weekend. Love it on an avocado.

I like the kick from the mustard as well and have used dry mustard at times.

There was a drug store in my old hometown, that made egg and olive sandwiches. It was egg salad the usual way only stuffed olives were chopped up in it, no pickles or relish. That, with one of their limeades was a big treat. Mother made these sandwiches once in awhile and I do now and then. Have you ever made egg and olive sandwiches?

Happy Easter....if you love olives...green ones....you can add diced ones to your egg salad...and it changes the taste again. I love egg salad....solo...or with olives.

I put mustard in mine also but have not tried adding pickle relish. Will have to give that a try sometime. I could eat egg salad all day. Yum!
