Salmon Patties

By now y'all must think all I do is travel and poor Bill can't get a homemade meal without going to Mom's house.

Well, you are almost right!

I decided that I'd better get in the kitchen and make his favorite salmon patties... before the shipment of ceramic pottery arrives from Orvieto.

Salmon Patties
1 large can salmon
1/3 cup fresh parsley, chopped
1 onion, diced
2 eggs, lightly beaten
2 Tbs butter
1 Tbs creole seasoning
1 sleeve ritz, crushed
olive oil

Drain salmon and pick out the bones (or buy boneless!) Saute onion in butter until tender. In a large bowl combine all ingredients. Stirring to blend. Form into large patties.

Coat the bottom of a skillet with olive oil. In a hot pan, brown the patties on each side for 3-5 minutes.
Serve with a salad and you will have a quick home cooked meal in minutes.

Y'all know the fastest way to a man's heart!

You're back?!!! I haven't been by in awhile, I have such a hard time visiting everyone. Looks like a wonderful time & I'm still So jealous of that trip. I just love, love Italy. Oh, and a hot air balloon ride for your 50th! HOw cool is that. I loved all the pics of the cappuccinos too...and we have the same frother. I just love mine. They do make some great coffee (caffe) in Italy don't they?! I know you loved it...

YUM! These sound so good ~ I'm going to try it! I'm going to share recipe this with my Mom, too - she's been making crabcake patties lately and this sounds like a good switch! (PS - do you ever eat fishcakes (cod cakes) with beans when you're in New England? Good ol' Yankee meal. lol)

When I see salmon patties, I start getting all nostalgic. My grandmother used to make those for me when I was a kid. Luckily, one of my college friends loved them too. We made them for dinner all the time when we were in school! :)

I've never made salmon patties before but this looks easy and I think I'll give it a try.

Oh, she would also add something to it and serve it over rice. That was good too.

My favorite thing in the world - Salmon Patties - you know, I have made them with tuna and they taste the same and I have also baked them in the oven and they are very good - but of course, the first best way is to fry those suckers until they are almost black - I eat them like cookies at room temp all day long!!!!!

I was so excited... while mon mari was in hospital, I found a can of salmon at the store (He remembers too many Friday's at Catholic school to eat it now).
No Ritz, but I made some darn good salmon patties... and ate them all myself... sigh.... The first in far too many years.
