Green Tomatoes...

My Upside-down tomatoes are looking good!My problem is letting my tomatoes ripen. When they get to this stage I am craving Fried Green Tomatoes!

I think I will resist picking these big boys, and rush off to Wayne's Market to buy some juicy vine ripe tomatoes. I'm making a big batch of Gazpacho!

Gazpacho
3 cups spicy tomato juice
1 small onion, diced
1 small green pepper, diced
1 clove garlic, minced
1 cucumber, peeled & diced
2 red tomatoes, diced
1 Tbs fresh cilantro, chopped
3 Tbs Italian salad dressing

Chop and dice all the vegetables, this can be done in a food processor. Combine in a large bowl. Add tomato juice (may substitute 1/2 spicy &1/2 plain) and salad dressing. Cover and chill. Serve cold with a dollop of sour cream.

This recipe is straight out of our Starting Fresh Cookbook. It is perfect for a hot summery day!

Fried green tomatoes are next on my list, then gazpacho. At that point, having satisfied my most basic and immediate dietary tomato needs (BLT, tomatoes with basil and feta, gazpacho, and fried greens), I can then start branching out into less critical tomato dishes.

Your tomatoes are looking great! I would definitely have trouble resisting them, too.

I can't wait to try your gazpacho recipe....we love it, and it's perfect for this time of year!

I'd go for the gazpacho early on! Yes, because they'll be plenty of green ones come end of season that will need to be rescued from the frost!

I don't care for fried green tomatoes but I enjoyed the first red ripe one from the garden in a sandwich today. Can't beat a mater sandwich!

Umm! Yummy!!! I think I'll take the fried green tomatoes, but that's not too health conscious. Oh well... May be next time.

Didn't get a chance to make the sorbet, but will definitely get to it on the 4th. Boy I can't wait!
