Cooking Light Virtual Supper Club

Our Cooking Light Virtual Supper Club for this month is going to 'Celebrate a Farmer'.
I decided to make these Hasselback Potatoes that I am seeing all over the blogisphere. Cooking light has This Demo - That describes the process . . . it is really very simple.

To prepare the potatoes, lay two chopsticks on either side. This will keep you from cutting all the way through. Make uniform slices along the whole length of the potato.
Soak in salted water to encourage the potatoes to open up.

Sprinkle with olive oil, sea salt and herbs.

Bake at 400 for 40- 50 minutes, or until done.
