We were celebrating a Cuban Dinner Party, and I was in charge of the soup. I searched the Cooking Light recipe box and found this recipe for
Chipotle Black Bean Soup
The chipotles give it a smokey depth of flavor that is just awesome. The black beans cook slowly with tomatoes and spices (I added the adobe sauce for an extra kick) Go to the Cooking Light website for the recipe.
I thinly sliced some corn tortillas and baked them till crispy. Topped it with Cheese and a dollop of sour cream.
Perfect for a football watching afternoon in the SEC.
