It's finally beginning to look a lot like Christmas at the Mc's house. I was slow getting motivated this year. It is different when there won't be a lot of family hanging around for the holidays. We have been eating peanut butter fudge every Christmas for years. Except for our Christmas Cookies this is the one recipe that my daughter wanted.
So, this one's for you!
Peanut Butter Fudge
1/2 cup butter
4 cups white sugar
1 cup brown sugar
12oz evaporated milk
7oz marshmallow cream
16oz peanut butter
1 tsp vanilla
In a large pot melt butter, add sugars and milk. Cook over medium heat until they begin to boil. Cook at a rolling boil for 7-8 minutes or until a candy thermometer reaches 230°. Remove from the heat and stir in marshmallow creme. Stir in peanut butter and vanilla. Spread into a buttered 9x13 baking dish. Cover with plastic wrap and cool.

That looks good enough to eat! We finally got our halls decked yesterday so don't feel bad...it's only Dec 10. Now I can start cooking. The real trick will be keeping it hidden from the three cookie monsters in my house so there will be some for company.
