Sunday Slow Bakers

Our Sunday Slow Bakers are baking Babbo Breadsticks today. These are featured in Gina's cookbook Dolce Italiano. They are spicy cheesy breadsticks that are served at the Babbo Bar. Don't let the yeast scare you away... they are easy as pie.
Grissini
(Breadsticks)

1/3 cup warm water
1 pkg yeast
pinch of sugar
2 cups all purpose flour
1 cup '00' flour
1 tsp salt
1/2 tsp cayenne pepper
1 cup cold water
2 Tbs EVOO
1/2 cup grated parmigiana
1 Tbs unsalted butter
Kosher salt

Prepare yeast with warm water and sugar. In a large bowl, combine flours, salt and pepper. Pour the yeast into the center of the flour, add water. Combine ingredients, kneading on medium speed for 2 minutes. Add Extra Virgin Olive Oil, 1/2 cup cheese, and butter. Continue kneading for 2-3 minutes until smooth. Remove from bowl and knead by hand on a floured surface until smooth. Return the dough to a large oiled bowl, cover with saran wrap and allow to rise over 2 hours.
Preheat oven to 375° .
Roll out 1 inch sections of dough into 14-15 inch breadsticks- about 1/8 inch thick. I rolled mine in kosher salt and rosemary. Bake 12-14 minutes until golden brown.
Makes about 30 breadsticks.
Y'all enjoy!

Those look amazing! If you can't get '00' flour (it's not that easy to find), what can you use instead?

Lydia~ the best substitution for 00flour is cake flour (that's what I used)
You can also double sift flour till it is s0000 fine :)
Donna~ I am so glad you came out of hiding. I love knowing that y'all are reading.
