Staying cool?


Just looking at this picture of lemons cools me down 10 degrees.
Which makes it only 98° in the shade here in Alabama.
How 'bout a quick and easy dessert for the hottest day of the year? These Lemon Squares will hit the spot.



Lemon Squares
1 1/2 cup flour
1/2 cup confectioners sugar
1 1/2 sticks butter
2 8oz pkgs cream cheese
1/2 cup sugar
2 eggs
1/2 cup lemon juice
zest of 1 lemon
Combine flour and confectioners sugar. Cut in cold butter until well blended. Press into the bottom of a 9x13 baking dish. Bake at 325° for 20 minutes until firm, but not quite brown. Set aside.
Beat cream cheese with sugar, add eggs, lemon juice, and lemon zest. Mix on low until well blended. Pour over warm crust. Bake 35-40 minutes until set in the center. Sprinkle confectioners sugar over the top. Cook in the fridge. Slice into squares to serve.

I love lemon squares & could eat a milion of them. No kidding! Someone made a batch & brought them to work...you know I had one! I wanted more...........

I love lemon squares and will have to go and get some stuff tomorrow to make them ~ you know...just so I can cool down about 10 degrees!hehehe. That will be my excuse anyway! I sure is hot here in middle GA - 106 with heat index of 115 right now at 8p.m. CRAZY weather.

I love lemon squares. Most of our family still lives in California (we live in MI), so we have a source for Meyer lemons and they make the most delicious lemon squares. I freeze the juice, so I always have some on hand. This is the first year I have tried to grow my own lemons and I actually have a few lemons – it isn’t easy here in MI. I am keeping my fingers crossed. Anyway, I have some "special" juice, so I might give your delicious lemon squares a try. Thanks for the recipe.

I told Jayne at Country Cottage Chic that you guys were going to talk me right on into getting back into the kitchen. That is so dangerous. Really, it is. I haven't had an oven fire in months...and that's probably been because I haven't used it in that long. lol But....my mother-in-law is coming to visit next week...wonder if I can "Tom Sawyer" her into cooking these for us? Just kidding!! I wouldn't do that to her - she's way too nice. But I COULD put one of the kids up to doing it....

I think Dallas is finally down to real summer now. It had been cooler until August came.
The lemons do indeed make me think/feel cooler.

These look great Sandi. I will have to try them in the future because I don't think I can turn the oven on to bake until it cools down a bit - I learned my lesson last week! LOL

This recipe looks like what we call Yummies, and they are yummy, especially on 104-degree days when we fight to keep the air inside below 80!

I made some and took to church last year. Someone else took some also and their's disappeared while only a few of mine were taken. Later I asked for the recipe and she said she had used a mix. Oh my did that hurt! lol. So guess whose recipe I will be using next time I make lemon squares? SANDI'S!
I think I used bottled juice. From now on it will be fresh squeezed.

If it was only cooler to make those luscious lemon squares. Oh my I do believe they are my favorite. Ever make them with meyer (sp) lemons?
