Bon Appetit, y'all

From Champaign, Illinois~ ChampaignTaste is hosting a Julia Child cook-off in honor of her birthday. I knew that this was one event I wanted to be a part of.

I can remember watching Julia Child on our black and white tv... way before HDTV, satelites, and the Food Network! (As my son would say 'Back in the Day') I can remember her amazing presence and throaty laugh~ that is when we could get the rabbit ears pointed in the right direction.

For this event I pulled out my book of 'Julia's Kitchen Wisdom' to decide what to make. This is the best of all her cookbooks; a collection of her helpful hints and basic recipes. If you ever see a copy, grab it! In this small book she offers advice on everything from making a hollandaise sauce, to roasting a duck.

I decided to go very basic~ after all, we are about good home cooking at WhistleStop. I'll admit that I have never roasted a duck and probably won't any time soon! Instead, I roasted a turkey breast and made some great turkey salad... a la Julia Child.

Turkey Salad
6 cups chopped cooked turkey
1Tbs olive oil
2 Tbs lemon juice
1 cup celery
1/2 cup purple onion
1 tsp fresh tarragon
1/2 cup parsley
3/4 cup mayonnaise
1/2 cup walnuts
"Toss the chicken with salt pepper, olive oil, lemon juice, celery onion and nuts. cover and refrigerate at least 20 minutes or overnight. drain out any accumulated liquid; toss with the parsley and tarrragon. Taste analytically and correct seasonings. Fold in just enough mayonnaise to enrobe ingredients. "

I thought the phrasing was 'looooovely', especially if you read the recipe in a Julia Child accent with a glass of wine in your hand. The only thing I changed is using Alabama pecans instead of walnuts. I don't think Julia would have minded!
Bon Appetit~ y'all

Bon Apetit to you too, Sandi.

I just added your creative name to the back porch. I missed doing that yesterday!

With Alabama pecans it's got to be good. I'm pronouncing that pah cons the way we always did in LA not how they do over here in Georgia (pee cans)!

I'm still laughing over this one, Sandi...it is exactly how my Mom always made Turkey, Chicken and yes, even Ham salad and now I know which cookbook she got it from!!! We girls plan to "fall to fightin'" over Mama's cookbooks one day real soon. She crossed over nearly seven years ago and my Daddy who is now 91, has finally decided that we can come take our choices of her cookbooks...there are four girls and 389 cookbooks...we plan to have a celebration in honor of Mama on that day! Keep on cookin' and sharin'...we love your blog!

Sandi,
That looks delicious. I remember Julia Childs and loved her quirky ways. There is a rotisserie chicken in my refrigerator that I may use and make this salad. Thanks for sharing.

Julia would have loved your substitution -- she was the queen of experimentation, leading the way for the rest of us.

I roasted a duck one Christmas a long, long time ago. All I remember was that it was really greasy and you couldn't stand to eat it after it got cold--unlike turkey, which is great cold.

Sandi, this is beautiful! And guess what? I have a bag of Alabama pecans in my cupboard! Think I'll get on this salad right away (is it OK if I use chicken?!).

I also love the way Julia says things in recipes. "Enrobe" the salad; yes.

Did you send me your permalink? I don't see it and am horrified to think you did and somehow I lost it. Anyway, I've got it now and will include you in next Wednesday's round-up! Thanks for taking part.

Hi Sandi - I thoroughly enjoyed your tribute and all the comments!

Thanks to your post I will no longer simply add salt and pepper but I will forever forward "taste analytically and correct seasonings."
