An Apple a Day...

Do you still have any apples left? After all of that apple pie, we need something low fat and nutritious. How 'bout an apple tuna salad? A little sweet, a little tart, and a lot of protien.
Apple Tuna Salad
1 lg can of tuna
1/2 cup diced apples
1/2 cup diced celery
1 tsp lemon juice
2 Tbs fresh dill
1/4 cup mayonnaise
salt & pepper to taste
Drain tuna well. Dice apples and celery, cover with lemon juice to keep from browning. Combine all ingredients. Serve in a pita pocket with some crunchy lettuce.

It may not be as yummy as a piece of apple crumble pie... but an apple a day (when it's mixed with tuna) will keep the doctor away.

I also want to take the time to thank Blue Zebra for tagging me with the Nice Matters Blogward. I love that she has kicked it up a bit...changed it from an award to a blogward. She is passing on the nice! I am not tagging anyone this time because I'd have a hard time narrowing it down.

Y'all are easy to be nice to.
Sandi

And since my husbands two most favorite foods might be apples and tuna, I do some version of this often. They are lovely together!

You know, my Grandmother always put apples in her chicken salad, don't know why I never thought about tuna salad and apple! Have a great day today, keep those little nudges toward a healthy kitchen coming!

Uh oh! You are making me think of an old boyfriend I had. He put apples in the tuna. That is some tasty stuff. I haven't gone to buy any yet! Well, Wal-Mart...but that doesn't count.

Congrats on the award!

Apples & tuna sounds good to me. I love chicken salad with grapes or dried cranberries...why not tuna & apples?

I don't do anything with mayonnaise (just a really weird quirk of mine... I can't even tough a jar! lol), But...that pie from the previous post looks DELICIOUS!!!

I hate to admit it but for as many times as I have seen tuna and apple paired together, I have never even tried it. Next time!

What the heck? "Y'all are easy to be nice to", you say? Since when? You're not nice to moi'. In fact, you are quite often stingingly harsh with me. Not that I'm complaining, mind you. I'm a willow. I can bend. But still...you're nice to everybody else? I'm....crushed and well, even somewhat despondent to hear that. Way to hit me where it hurts. It's lucky I'm so darn resilient, huh?

Sandi - you can come over to my house for the salmon, if you bring me some of this apple tuna salad (and some fired green tomatoes!)
It sounds yummy!

This sounds SOOOO yummy! I'm going to have to try this one. Hubby makes a yummy chicken salad with apples and grapes. Then there's yummy Waldorf salad with apples, too! =) I haven't made that one for a while... looks like I have plenty of recipes left to use my apples in! Starting with this tuna... =)

This sounds really different but will have to give it a try. It reminds me a bit of Paula Dean's bag lady chicken salad. Have a great weekend! xo, Becky

I've always loved tuna salad with boiled eggs, sweet pickle, a tiny bit of chopped celery, chopped apple, and RAISINS! My favorite sandwich...
