PhotoHunt -RED

The PhotoHunt for today is Red ~
Of course, I picked the colors of the Italian flag . . . Red, White and Green.


In the colors of a Caprese Salad.

This is To.Die.For.
The little tomatoes are so sweet, the buffalo mozzarella is fresh from the buffalo cattle that are living just over the mountain, and the basil that is so fresh and peppery.
A bit of fresh olive oil (and of course a glass of Marisa Cuomo)

I am HaPPy!

Eat them whole or Dice 'em up . . .

For the Holledayz

This is a special recipe for Holledayz.

It is simple, gluten free, and just in time for Memorial Day.
It is the perfect summer time treat.
A dessert that is straight from The Amalfi Coast (and pinterest)

Lemon Squares
1 cup gluten free flour
1 cup sugar
1/2 tsp salt
1 tsp baking powder
2/3 cup butter ~ at room temperature
2 eggs + 1 egg white
1 Tbs Lemon zest (or more)
3 Tbs Lemon juice
Pre-heat oven to 350
Blend dry ingredients, Lightly cream in Butter. This should be easy if the butter is room temperature. In another bowl, combine lemon juice and eggs. Add slowly to dry ingredients, without over blending. Pour into a greased 8x8 pan
Bake for 25 minutes.
Icing
3/4 cup confectioners sugar
1Tbs lemon juice (or Limoncello)
Whisk together a small amount of lemon juice with powdered sugar to make a thick icing. Drizzle over the top of the cooled cake.
DeLicIoUS!
It makes a thin 'brownie' type lemon bar that is so moist and lemony.

You will be able to smell the lemon groves and hear Italian church bells.
Well . . . Sort of.

The best Blues

Happy Blue Monday.
I have just downloaded a thousand photos of my recent trip to Italy . . . these are some of my favorite blues.
I always stop in Charlotte for a little LuLu time before the long flight to Rome.


Spending a few hours at the park with this little bundle of energy ensures that I will be sleeping on the flight.

While I was there we just had to try some Gelato . . . I love the concentration on Hopie's face. She declared that the banana tasted just like a big banana!

A quick drop and kiss at the airport . . . and I was on my way.

Cooking Light ~ Lovely Lemons of Amalfi

It is time for our Cooking Light Virtual Supper Club. . . I might be in Italy, but I haven't missed a Virtual Supper Club in 6 years. And I am certainly not going to miss this one.

This is our final Supper club meeting. As with most of the blogging world, things have changed. We are all busy, and it becomes a struggle to post on a regular basis (can I get an Amen!) We have all agreed that this would be our final supper club meeting. I am sad to see it go, because I have formed friendships with these other cooks.
We decided for this menu we would celebrate the lovely lemons of Amalfi. . . I went to the cooking light pages and found this recipe for Sole with Lemon Caper Sauce

Lemon Sole with a Lemon Caper Sauce
1 Tbs olive oil
1 sole fillets
1/2 tsp salt
1/4 tsp pepper
1 tsp butter
1 garlic clove minced
3/4 cup chicken broth
2 Tbs capers
1 Tbs fresh lemon juice

Heat oil in a large nonstick skillet over medium heat. Sprinkle fish with salt and pepper. Place fish in pan; cook 3 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness. Remove fish from pan.
Melt butter in pan. Add garlic; cook 1 minute or until lightly browned. Add broth, scraping pan to loosen browned bits. Bring to a boil; cook until reduced to 1/4 cup (about 6 minutes). Stir in minced capers and juice; cook 3 minutes or until sauce is slightly thickened. Remove from heat; stir in parsley. Serve immediately.


This makes for a dish that is so light and fresh, you would think you were at the villa in Positano.

Amalfi Lemon Tour

For my Traveling Tuesday ~ I am headed back to the lemon groves on the Amalfi Coast.


This time we went to visit our friend Salvatore Aceto, his family has owned this lemon grove outside of the town of Amalfi for generations. It was a thrill to meet his 80+ year old father, who still works in the lemon groves.

This family is So special. They are working hard to promote the idea of organic farming and have the MoSt Fantastic lemons.

We were able to wander through the terraces of lemons, some trees are hundreds of years old.


After climbing the hills. . . no complaining ~ we weren't required to carry the heavy baskets of Lemons. We were treated to a pitcher of REAL lemonade and lemon cake . . . the views were spectacular.

Everywhere you looked, the lemons were waiting to be hand picked.

Lemons that were so sweet, you could eat the whole thing ~ peel and all.

I could have just stayed right here ~ But they were harvesting the very next week. That sounded to much like work to me.

Instead. . . we happily took the ferry back to Positano.
