PhotoHunt ~Bird

Is there anything more relaxing that watching the birds at the beach?
I don't think so . . .
If there is, I will let you know after this weekend.
Just another day at the Beach.

Travel Tuesday ~ Just Beachin'

For my traveling Tuesday... I think I'm going to do some beachin' (it's been that kind of week)
and what a better place to relax than the FloraBama . . .
and if you doubt, they even have their own Wikipedia Page
It is nothing fancy, but a national landmark just the same.
In fact, a hurricaine rarely does any damage that can't be repaired in a weekend.
A funny BUT TRUE story.
Several years ago I was there with friends on a random, middle of the winter evening.
The place was empty, except for a ragged looking singer with a guitar. He was singing all kinds of Jimmy Buffet songs.
We were powered by youth and bushwackers . . . we danced and heckled him all night. He would come right back with a wise crack and another song.
HOURs later he packed it up . . . and the bartender brought us another round of drinks comliments of the musician.
Who was in fact ~
Jimmy Buffett

I of course take total credit for his resurgence in the 1990's... If it hadn't been for us, he might have been happy playing his guitar at the FloraBama for the rest of his life.
Who wouldn't be?

PhotoHunt ~Focus

The PhotoHunt for this week is 'Focus'
I don't go to the beach without my handy camera.

. . . there is always something to Focus on

I could have done a better job on Focusing in on this shot.

But I still love the memory of it ~

Saturday PhotoHunt ~ Colours

The PhotoHunt for today is Colours ~
I have been busy with my crochet hook and this yummy soft cotton yarn . . . in all kinds of colours.
I loved the bright colours ~ then had to add a row of crimson red (to balance out the orange and blue) for a sweet baby who is coming soon.

Happy Hunting y'all ~

Cooking Light ~ Tuscan White Bean Soup with Prosciutto

For our March Cooking Light Supper Club, Sarah said "why don't we go Italian?" No argument from me!
When we had that recent snow day. . . I decided to search the Cooking Light library and came up with This Tuscan Bean Soup. Perfect for a big pot of soup on a cold winter's day.

Tuscan White Bean Soup with Prosciutto
2 teaspoons olive oil
1/2 cup chopped prosciutto or ham (about 2 ounces)
1 cup chopped onion
3/4 cup chopped celery
3/4 cup chopped carrot
1 garlic clove, minced
1 cup water
2 (19-ounce) cans cannellini beans or other white beans, undrained
2 bay leaves
1 (15.75-ounce) can fat-free, less-sodium chicken broth
2 tablespoons minced fresh parsley
2 tablespoons sherry (optional)
1/4 teaspoon black pepper

Heat the oil in a large stockpot over medium heat. Add the chopped prosciutto, and sauté for 2 minutes. Add the onion, celery, carrot, and garlic; sauté for 2 minutes or until soft. Add the water, beans, bay leaves, and broth, and bring soup to a boil. Partially cover, reduce heat, and simmer soup for 20 minutes. Add the parsley, sherry, and black pepper; cook for 1 minute. Discard bay leaves
I had found some nice prosciutto and added fresh Thyme ~ The perfect treat to keep us warm.
Now . . . on to daydreams of Italy. . .

For our Cooking Light supper club . . . let's see what everyone else has brought for our Italian feast.
Jerry has a Melon Prosciutto Salad
Val is making Gnocchi with Browned Butter
Susan is bringing a dessert of Warmed Caramelized Pears with Clove Zabaglioni
Sara is making Parmesean Crusted Sage Pork Chops

Who's bringing the Vino?
Y'all enjoy ~

Saint Joseph

Do you know about St Joseph?
I have heard that he can help sell a house, and his commission is less than another realtor. . . to I went to the source of all knowledge ~ FaceBook.
Sure enough, all my catholic friends agree'd, and even a realtor or two. An article in the Boston Globe said "Catholics say that because St. Joseph was able to move Jesus and Mary from harm's way many times, he knew something about successful relocation. He was also a carpenter and is the patron saint of that trade."
We aren't catholic ~ although I do light candles in the cathedrals in Italy.
I figured . . . what the hey? It can't hurt.

This special St Joseph came from a friend in NJ ~ he came with special blessings.
I got out my little shovel . . . and in the ground he went.
UpSideDown of course
Now . . .  We are waiting for the doorbell to ring.
I'll keep y'all posted ~ Maybe we will be Traveling soon. I'll share this as my Traveling Tuesday (how's that for positive thinking?) I am also joining Our World Tuesday
Y'all enjoy the ride~
